Reibekuchen, Raggmunk

"Raggmunk" translates to "Swedish potato pancake" in English. It is a traditional Swedish dish made from grated potatoes mixed with a batter of flour, milk, and eggs, then fried in butter, usually served with fried pork and lingonberry jam. Here is the German version, "Reibekuchen".

Ingredients

  • 2 kg Potatoes
  • 2 eggs
  • 1 onion
  • 60 g flour
  • salt
  • oil

Method

  1. Wash the potatoes, peel them, and grate them well after draining. If necessary, pour off excess liquid.
  2. Peel the onion, finely grate it, and add it to the potatoes.
  3. Season the mixture with salt.
  4. Mix in the eggs and flour. If the batter is still too runny, add more flour.
  5. Heat a generous amount of oil in a pan. Place small portions of the batter into the pan and fry the potato pancakes in batches until golden brown on both sides.

Potato pancakes taste best when served piping hot, straight from the pan, sprinkled with sugar, accompanied by applesauce, or served with a salad.
